So I did it! I finally tried one of those crazy jar salads! My verdict is....it's pretty much the BEST thing ever invented! It keeps my salad waaaaayyy fresher than a plastic container, feels fun to eat, and tasted delicious! I can't wait to try a million variations of salads, but here is what I started out with:
I call this The Maple Dijon Chicken Cobb!
Dressing: 3 Tablespoons of red wine vinegar
2 Tablespoons of EEOO
1-2 tsp Pure Maple Syrup
Sea salt and pepper to taste
Make dressing by whisking the ingredients together. Place about 1 Tablespoon of dressing in the bottom of each of 5 wide mouth quart sizes jars.
Salad:
Layer in on top of the dressing in this order-
3-5 cherry or grape tomatoes, halved
about 2 Tablespoons of chopped avocado
a handful of chopped, baked chicken breast
1/2 of a hard boiled egg - chopped
1 slice of nitrate free organic turkey bacon - cooked and crumbled
1/5 of a green apple chopped small
a pinch of slivered almonds
Stuff remaining space in jar with baby spinach or whatever other greens you love! I think arugula would be yummy with this too!
