How AWESOME is this? Flourless muffins! Edan LOVES them! Daddy LOVES them! Mommy LOVES them! They are super quick and super moist and yummy! Most importantly they are CLEAN!
Get out your blender or food processor and load it up with these things:
2 bananas
2/3 cup of sweet potatoes (cooked and mashed)
1/4 - 1/2 cup of Pure Maple Syrup (depending on your taste for sweetness)
1/2 cup of all natural peanut, almond, or cashew butter
1 tsp of cinnamon
1 tsp of ginger
1/2 tsp allspice
2 eggs
***Blend everything up until it makes a nice batter and then ADD 2 tsp of BAKING POWDER! AND BLEND AGAIN.
Spoon into 12 greased muffin tins and bake at 350 for 18-20 minutes. Enjoy!
You can TOTALLY make lots of variations of these muffins. Try out different spices, add blueberries, nuts, or even dark chocolate chips. The possibilities are endless and your kiddos will gobble them up!
